Beef Stroganoff
Serves 4
500g beef (cut into strips)
50g butter
1 onion, chopped
1 tin of mushrooms in sauce or a cup of fresh mushrooms, sliced
2 beef stock cubes
salt and pepper
3 tablespoons tomato paste
1/2 tin evaporated milk
In a frying pan melt the butter, add the chopped onion and steak, cook until brown. Add the mushrooms, stock and salt and pepper. When all cooked add the tomato paste. Bring to the boil, simmer and cover for 5 minutes. Just before serving add evaporated skim milk, mix in and serve with fettuccine or rice. Sprinkle chives over the top for decoration then serve.
