Lemon Loaf
125g butter, softened
1 1/2 cup castor sugar
1 large lemon, rind finely grated, juiced
2 eggs
1 1/2 cup self raising flour
1/2 cup milk
Preheat oven to 180C (170C for fan forced). Grease a large loaf pan.
Using an electric mixer, cream butter and 1 cup of the sugar and rind until light and fluffy. Add eggs, one at a time, beating well between each addition.
Add half the flour and half the milk to the mixture. Gently stir to combine. Fold in remaining flour and milk.
Bake for 45-50 mins (check after 40 mins for fan forced) or until a skewer inserted into the centre comes out clean.
Combine remaining sugar and 1/3 cup lemon juice and pour over HOT loaf while still in pan. Allow to stand in pan until cool.
