Mini Pizzas
1 pkg (tbsp) yeast
1 1/4 cup warm water
2 tsp salt
3 1/2 – 4 cup flour
2 tbsp olive oil
8 oz can tomato sauce or favourite pizza sauce
2 cup Mozzarella cheese, grated
Garlic powder and oregano to taste
Dissolve yeast in 1/4 cup warm water. Combine salt with 2 1/2 cups flour. Add yeast mixture to flour along with olive oil and remaining warm water. Mix well, adding one more cup of flour. Knead 10 minutes, adding up to 1/2 cup flour if necessary. Let rise 1 1/2 hours.
Split into 2 parts and roll each into thin rectangles. Spread with tomato sauce. Sprinkle approximately 1 cup of grated cheese on each rectangle. Sprinkle with garlic and oregano to taste.
Bake on cookie sheets in preheated 450 degree oven for 15 minutes or until crust is brown. Use pizza cutter to make 12-16 “mini” pizzas.
Note: You may use 2 cans of refrigerated commercial pizza dough in place of your own dough.
