4 Minute Cake

3 cups self raising flour
2 cups sugar
250gm butter, slightly melted
vanilla
4 eggs – place 2 eggs in a cup (250ml). Fill to the top with milk. Do the same for the other 2 eggs.

Combine ingredients in a large bowl.
Beat all together for 4 minutes.
Bake in moderate oven (180c) for approx 3/4 – 1 hour or until skewer comes out clean.

Variations
Banana Cake: Add 4 mashed bananas and 1 teaspoon bicarb soda.
Orange Cake: Add 2 tablespoons orange juice to each egg batch and top with milk. Add 2 teaspoons grated orange rind to dry ingredients.
Chocolate Cake: Use 2 1/2 cups SR flour and 1/2 cup cocoa and add 1/4 teaspoon baking powder.
